Perched at 400 meters on a vast 300 hectare hillside overlooking Kagoshima Bay and Sakurajima, The Ontake Distillery is one of Japan's most exclusive whisky operations. Built by shochu maker Nishi Shuzo (est. 1845), it uses exclusively Solera Oloroso sherry casks and natural soft water flowing at over 1,000 liters per minute from 300 meters underground. Most production goes to private cask owners.
